Swedish Chicken And Pear Hash

Makes 4 Main Dish Servings


  • 1 large sweet potato
  • 1 pound cooked chicken or turkey, cubed
  • 1 can (15 ounces) Bartlett pears, drained and diced
  • 1/2 cup sliced green onion
  • 1/2 cup chicken broth
  • 1/4 cup butter, melted
  • 2 tablespoons chopped fresh dill or 2 teaspoons dried dillweed
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup soft bread crumbs
  • 1 tablespoon butter, melted

    Trim, peel and coarsely shred sweet potato. In large bowl combine shredded potato, chicken cubes, diced pears, green onion, chicken broth, butter, dill, lemon juice, salt and pepper. Toss to mix well. Pour into 2-quart casserole. Cover and bake in 375°F oven for 30 minutes. Combine soft bread crumbs and melted butter; toss to mix. Uncover and sprinkle crumbs on top of casserole. Return to oven and bake, uncovered, 10 to 15 minutes longer.
